Tasty high protein Vegetarian salad

This salad is super tasty and super simple to make. High in protein and fibre it will keep you full and satisfied for hours as well as getting in a good portion on veg for the day.

It’s not a very complex recipe so it’s great for a relatively quick nutrition dense meal that will fill you up.

Method

  • Boil an egg for 5 minutes so it’s hard and the yolk does not run
  • Boil green beans
  • Slice your radish,
  • Tomatoes, cucumbers into medallions (circular pieces) and cut up your lettuce or just use regular salad leaves (I recommend Italian leaves)
  • To make the glaze place two table spoons of olive oil in a jar or bottle with half a table spoon of vinegar and shake vigorously till mixed.

Pour onto salad mixture and enjoy
