Healthy vegan recipe – Mutabbal

Mutabal a tasty, vegan lebanese dip based on aubergines and tahini. I made this dip a week ago for a gathering I had with friends and it went down a treat, so here you go.

Ingredients

  • 1 Green chilli
  • 1 tablespoon of Tahini
  • One Lemon
  • 2 cloves of garlic
  • Olive oil
  • 1 large red onion
  • Aubergine

Method

  • Preheat the oven to 220 degrees
  • Slit the aubergines in half and cut slits into the aubergines
  • Lightly oil the baking trays and place in the oven for 30 minutes
  • Remove from the oven and allow to cool for 30 minutes
  • Then place all the ingredients in a blender together until smooth

Serve and enjoy
